All the basics of the classic noodle dish are in here: there's chicken for a protein punch, savoury peanuts and fresh, crunchy carrots, spinach, and spring onion, all doused in a sesame and soy dressing. 2 tsp toasted sesame oil
1 tbsp rice-wine vinegar
½ tsp minced garlic
¼ tsp low-salt soy sauce
85g grilled, skinless chicken breast
200g cooked bulgur
60g roughly chopped spinach
2 tbsp chopped spring onion
220g shredded carrot
1 tbsp chopped, roasted, salted peanuts
Whisk 2 tsp toasted sesame oil, 1 tbsp rice-wine vinegar, ½ tsp minced garlic and ¼ tsp low-salt soy sauce.
Using a fork, shred an 85g grilled, skinless chicken breast.
Toss 200g cooked bulgur with 60g roughly chopped spinach.
Top with 2 tbsp chopped spring onion, 220g shredded carrot, the shredded chicken and 1 tbsp chopped, roasted, salted peanuts.
