Instructions

  1. Line a baking sheet with parchment paper and preheat the oven to 425° F.

  2. Peel and cube the butternut squash. Then, peel and dice the garlic.

  3. Combine the butternut squash, garlic, sage, olive oil, maple syrup, salt and pepper in a mixing bowl.

  4. Spread the seasoned squash evenly on top of the parchment paper and place in the oven for 10–12 minutes.

  5. While the squash bakes, slice the baguette and lightly brush the slices with olive oil.

  6. Once the squash is almost or completely done cooking, place the bread on a separate baking sheet and place in the oven for 2–3 minutes to toast.

  7. Once the squash is done, transfer it to a mixing bowl and combine with balsamic vinegar and green onion.

  8. Spoon the butternut squash mixture on top of the toasted baguette slices, garnish with more fresh sage and serve.
