1 lb shredded pork
1 tsp chili powder
1 tsp cumin
1 tsp smoked paprika
8 large flour tortillas
½ cup shredded Mexican blend cheese
¾ cup pico de gallo, extra for garnish
1 cup refried beans
1 tbsp olive oil
Guacamole, for garnish
½ cup sour cream, for garnish
Chopped cilantro, for garnish
Combine shredded pork with chili powder, cumin, and paprika in a small mixing bowl.
Lay a tortilla down flat and make a vertical cut up to the center of the tortilla using scissors.
Use the incision as a reference to visually section the tortilla into quadrants. Then, add the seasoned pulled pork to one quadrant, cheese to the other, refried beans to the third section, and pico de gallo to the last.
Start from the bottom left quadrant and fold the tortilla up and over the top left section, then fold it over the top right before stopping at the bottom right.
Heat olive oil on the grill, then add the quesadilla and cook over medium heat for 3 minutes on each side.
